Things we eat these days.

We pretty much eat everything, I love cooking a nice meal for my family. We love sitting down at the island or at the table if we have guest so we can chat about our day.
When I grew up we had different times for dinner and not everyone was together at the table. I remember eating dinner just standing in the kitchen my mom would remind me to please sit down and eat.
So recently the hubby who is a great cook and also my mentor, made us Tuscan Tortellini soup oh my I shared this on the facebook and inspired others to make the same this is a hearty soup you want to eat on a cold night. It has Italian Sausage in it and also Kale but you can put any greens you like and let me tell you the kids really loved this soup and yes the kale too.

Fish on the grill.

Ever since my husband decided to buy the Kamado Joe (the big black egg) grill instead of the green egg we have been grilling a lot. We have grilled fish, chicken, picanha, filet mignon, chicken satay and vegetables. We also did pizza and to our disappointment they didn't come out how we wanted them we know what went wrong and will give it a try again some time soon.
So this time we grilled a wild caught fish he bought recently. I made a yellow rice, corn on the cobb and a side salad.

Mediterranean Goodness

My kids love meatballs, and I try to make them every time different so I don't get bored. This time I used Ground Turkey and I used an egg and chopped thyme, oregano and chives and of course you add salt and pepper, I used other spices that I have on hand too.
The Mediterranean  crunch is store bought from Whole Foods, and since it was a hit the first time I made them Paleo Eggplant fries they are super healthy cause they are baked.

Ingredients:
Eggplant, a drizzle of olive oil, salt and pepper
(I just used one big and small  eggplant and it was enough for us 4)
 Pre-heat oven to 400 degrees.
 Cut the eggplants into medallions, then stack them  and cut into French fry-like strips.
Place eggplant strips onto a cookie sheet and drizzle with olive oil. Season lightly with a bit of salt and pepper.
 Pop them in the oven for 20-25 minutes, until the majority of them are browned and crispy.
I added bit more of salt and pepper.

Fish with creole sauce.

There are days that I crave certain foods from where I come from, the island.  I love fish, but here if I want to catch my own I have to drive 5 to 6 hours. I bought a beautiful tilapia at Whole Foods. When I cook fish I also will cook a separate meal for my youngest who has a fish allergy.

I marinated the Tilapia  with lemon and pepper and added a organic citrus seasoning I found at Whole Foods as well. Grill this or bake it in the oven.
I made a creole sauce a la mom. (a combination of onions, tomatoes, garlic, peppers and a certain secret ingredient)
Sauteed fresh asparagus and broccoli, oven roasted sweet potatos and  voila dinner is ready. 
The difference about this creole sauce is that I added fresh dill to it.

I just wanted to share what prompted me to start blogging about food, here are some of the pictures I take weekly of food I cook. People suggested a book , I decided to start blogging,   some of the pictures I used my camera and others are taken with the iphone. Black bean pasta with Garlic Shrimp.

This is my first time trying black bean pasta not  bad all I must say. I bought mine at  Whole Foods. 
You cook the past according to the directions on the package.

1 package of black bean pasta
1 pound of Shrimp
1/4 cup chopped chives leave some for garnish.
3 cloves of garlic minced

I sauteed my Shrimp with the minced garlic in a mixture of olive oil and garlic butter, yes lots of garlic. Stir in the chives. After the shrimp gets a beautiful color and is cooked through combine the pasta and shrimp, garnish with chives and shaved parmesan cheese, slices of lemon. 
Serve while it's hot.

Spot light on: Le Bistro at Roswell Provisions.

My friend Ivonne loves good food and cooking just like me. I don't recall the story how it was that we decided to try out the Restaurants on Canton Street Roswell. We went to Zest I believe for lunch and later decided that once a  month if time permits we will choose another place to eat.

This time she chose Le Bistro, this is the new restaurant in the Roswell Provision. There is a market where you can get cheese , meats and bread and the Provisions Home where you can buy beautiful hand towels, soap, yummy candles and home accessories.

It was hard pick out something cause everything seemed delicious. I went with Le Crepe Alsace which is a crepe filled with ham, caramelized onions and creme fraiche.We did split the desert which was again a crepe but this time filled with ice cream , sliced bananas and whip cream, and a drizzle of chocolate and fresh fruits.
So if you are in Roswell this place it's worth trying out they do have salads, sandwich, soups, quiches and more.
